Chef Don’s Kicked Up Spumoni Cake with Dumante Verdenoce

Eateries and restaurants of every kind are noticing the unique flavor of Dumante Verdenoce including El Nopal of Louisville, KY. Chef Don got a visit this past January from the writers of Gourmet De Ville where he proudly presented a twist on his famous Susie’s Sweet Cake. The recipe was presented by J.Ashton of Gourmet De Ville in her article titled, “Chef Don Tests Gourmet Verdenoce Dessert”. The entire Gourmet team was treated to the Kicked Up Spumoni Cake and they all agree the cake was both moist and delicious! Ashton gives credit to Chef Don’s masterful confectionary skill and Dumante’s quality ingredients for a dessert she and her team won’t soon forget.

” All participants in the tasting unanimously agreed that the cake was moist and delicious…” Chef Don said of the product, “I was very pleased by the way the ingredients worked together to bring out the distinctly nutty pistachio flavor of the Verdenoce. It really compliments the other ingredients.”

Chef Don’s Kicked Up Spumoni Cake

Ingredients:

CAKE

  • 1 package yellow cake mix
  • 1 cup milk
  • 1/3 cup Dumante Verdenoce Pistachio liqueur
  • 1/3 cup butter, melted
  • 4 large eggs
  • 1 package instant pistachio pudding
  • 1 dozen maraschino cherries, chopped
  • 1/2 cup semisweet chocolate chips, tossed with 1 tablespoon of flour
  • 1/3 cup vegetable oil

METHOD:

  1. Preheat the oven to 325 degrees. Grease well a bundt cake pan.
  2. In a large bowl, combine the cake mix, milk, melted butter, eggs, pistachio pudding, liqueur, oil and cherries
  3. Mix well into a smooth batter
  4. Toss the chocolate chips with the flour to help them stay suspended in the batter
  5. Stir the chips into the batter
  6. Pour the batter into the prepared bundt pan
  7. Bake for 55 minutes until the cake tests done
  8. Frost with the butter cream icing

 

BUTTER CREAM ICING

  • 3 cups powdered sugar
  • 8 tablespoons unsalted butter, softened
  • 3 tablespoons cherry brandy
  • 3 tablespoons Dumante Verdenoce pistachio liqueur
  • Combine all ingredients in a bowl and mix until smooth. Adjust liquid and sugar for proper consistency.
