Molten Pistachio Chocolate Cake

Ingredients:

  1. 4 oz. semi sweet chocolate
  2. ½ cup butter
  3. ¼ cup heavy cream
  4. 1 ? T  Dumante Liqueur
  5. ½ t vanilla
  6. 1 cup confectioner’s sugar
  7. 2 eggs
  8. 1 egg yolk
  9. ¼ +2T all purpose flour
  10. Pinch of cinnamon & nutmeg

Method:

  1. Preheat oven to 400
  2. Grease eight 6ounce custard cups
  3. In sauce pan, add butter, chocolate and cream, heat over low flame, stirring occasionally.
  4. When melted and smooth, remove from stove. Whisk in sugar, vanilla and Liqueur. Whisk in eggs, then gently fold in  remaining ingredients, just until smooth.
  5. Bake for 10-15 minutes or until sides have set and center still jiggles.
