Dumante French Toast by Chef Moore of Volare Ristorante
Chef Joshua Moore of Volare Ristorante in Louisville, KY shares his amazing Dumante French Toast that is served every year at his Easter & Mother’s Day brunch! Chef Joshua Moore combines two of my absolute favorite things into what must be the most delicious way to start the day that I have ever encountered.
- 1 loaf day old Italian bread (sliced ½ inch thick on the bias)
- 2 cups whole milk
- 1 cup sugar
- ½ tsp. salt
- 1 tsp. cinnamon
- 1 Tblsp. vanilla extract
- 8 eggs
- 8 oz. Dumante
- 4 Tbsp. Unsalted Butter
In a large bowl combine milk, sugar, salt, cinnamon, eggs, vanilla, and Dumante then beat with a whisk until smooth. Heat a griddle over medium heat. Dip bread in the batter until saturated. Place the butter on the griddle and cook French toast on each side until golden brown. Finish with pure maple syrup, fresh berries, and powdered sugar. Enjoy!
